BISCOTTI ALLE MANDORLE - ALMOND BISCOTTI

Biscotti, from Latin "bis" meaning "twice" and "cotto" meaning "cooked", are crunchy cookies with almond bits giving it a truly beautiful nutty flavour. While they may sound fancy and difficult to make, they truly are a simple cookie made with simple ingredients.

Rustic looking and old in origin, tracing back to Roman times, biscotti are the perfect dipping vessel for your morning cappuccino or cafe latte. Did you know that biscotti is plural for more than one, while biscotto is singular meaning only one cookie?



BISCOTTI ALLE MANDORLE


Prep Time: 20 Minutes

Cook Time: 40 Minutes

Total Time: 60 Minutes

Servings: 2 Dozen Cookies


Ingredients:

Dough

  • 3 1/4 cups all purpose flour

  • 1 cup sugar

  • 1/2 cup vegetable oil

  • 1 tablespoon baking powder

  • 3 large eggs

  • 1 tablespoon vanilla extract

  • 1 1/2 cups finely chopped almonds



Instructions:

1. Preheat oven to 375 degrees F.


2. Line two cookie sheets with parchment paper and set aside.


3. In a large bowl, whisk together the eggs, sugar, oil and vanilla extract, until well blended.


4. Next, sift the flour and baking powder, slowly into the bowl and stir until a heavy dough begins to form.


5. On a well-floured surface, place the cookie dough onto the surface and divide the dough into two pieces. Form each piece into a roll/log, approximately 12-inches long each, and place each log onto the parchment lined cookie sheets.


6. Next, press down on each log to make it approximately 1-inch thick in height.


7. Now, place the cookie sheets into the oven and bake for approximately 30 minutes, until golden brown.


8. After 30 minutes, remove the cookie sheets from the oven and transfer the cookie logs onto a cooling rack to cool.


9. Once the cookies are cool enough to handle, with a serrated knife, slice each log into 1/2 inch sliced cookies. You will make the slices crosswise at about a 45 degree angle.


10. Next, place the slices cut side up back onto the cookie sheets and place the sheets into the oven. Bake the cookies for another 10 minutes on each side.


11. Once the cookies are lightly toasted on each side, remove from the oven and let completely cool on a cooling rack.


12. Once the cookies are cool, you can then enjoy or store in an air tight container for later enjoyment.
